I moved in with mom after Dad passed away. I lost job due to pandemic, and I just acquired new job after 18 months. Mom was/is? self-sufficient at home alone, (my sister would assist with doctor visits and visit her weekly) but dementia has created resentment and paranoia at me for getting a job. Blames doctor and me for her loss of taste and appetite, resents my sister for helping out. No POA, and she refuses to go to doctor thinking we are trying to put her away. I just want her checked out since no meds or food in over a week. Her doctor basically said not to force meds but let her be, but to get her to emergency. Her paranoia has caused a resentment of me so strong, that she thinks I'm trying to poison her. At 4:00 a.m one morning she threw out all the food I prepared for her. How do I get her to the doctor? If I call an ambulance, she will refuse to go. Can they take her anyway?

I would absolutely call 911 and let the paramedics and hopefully, hospital staff know what you’ve stated here. Mom needs a thorough evaluation before you’ll know what’s next. And don’t let her anger guide you, she’s lost ability to reason, it’s now you do what’s best for her despite her upset

For whatever it's worth, loss of smell and therefore taste is a covid symptom, even if she has no other symptoms. I lost mine when I had covid in March 2021 (and it took a long while for it to return. It does cause you to lose your appetite). My son's roommate lost his "out of the blue" and had no other symptoms.

The ambulance crew can't force her to go but they are highly skilled in persuasion, and at the very least you will have documented basic observations on record. Say "mom, I'm really worried and I'm not taking any risks so I've called the paramedics to come and check you over" and do it anyway. The worst that can happen is she's cross with you - the team will be lovely to her, they always are.
