My mom is 80-years-old and has several health issues. She is on a lot of medications. She recently was told she need to use a CPAP due to sleep apena and swelling of her legs. Since she has started to try and use it, she has had hallucinations. Has anyone else heard of this occurring?

Speak to moms Alzheimer's doctor about this......the CPAP mask may have to go.
Good luck to you.
Is she using it correctly? Were the settings custom set for her in an appointment with her actual unit and a certified sleep technician? Is it working properly?
Keep encouraging the cpap but do speak to her doctor about this new problem.

Also, I see that your mother unfortunately suffers from Alzheimer's, which may have a factor on your question.
